This project involved a team of industry representatives to design a revised visual assessment system for carcase and carton meat monitoring. It is a continuation of findings from the AMPC project, process monitoring for the Australian meat industry.

This project developed a Meat Hygiene Assessment system that is risk-based, allowing a processing plant to focus on food safety plus areas of risk to their business while making more efficient use of labour.
