Review of value propositions for a hyperspectral image analysis solution in red meat supply chains

Several imaging tools, such as X‑ray, NIR, DEXA, colour cameras and hyperspectral scanners, are already used in meat processing to check product quality. Talking with processors and observing inspection processes showed that there are clear spots on the production line where new imaging tools could help inspectors work more efficiently and make better decisions.

Current rules still require a Meat Safety Inspector to physically check each carcass, but technology can support them by flagging issues earlier. While there are only a few providers in the Asia‑Pacific region, there is strong interest in tools that improve disease detection and provide more consistent feedback to producers.

Overall, new imaging and measurement technologies offer opportunities to strengthen inspection, improve accuracy, and support vets and inspectors without replacing them. This could also help farmers get clearer information about animal health and improve product quality.
