Development of Persian soups\meat dishes from Australian lamb for export markets

AMPC partnered with an Australian red meat processing plant to test and trial the development of Persian soups and meat dishes from Australian lamb for export markets. 

As part of the project, Kaleh Pacheh, a Persian-style soup made from sheep feet and heads was developed in a ready-made meal frozen format.

A pilot scale facility was set up to validate the processes, identify market demand and evaluate the commercial business case to scale up.
