This project trialled the use of a UV steriliser for hand-knives in a red meat processing plant to use less water, less power and produce less condensation than traditional knife sterilisers. 

As part of the project, a test UV steriliser unit was installed at an NSW-based red meat processing plant. The trials highlighted the difficulty of sterilising with fat and other debris on the knife, as it would block the UV. There were several alterations to the test unit to better control water pressure and temperature prior to UV application. 

AMPC will be exploring other sterilising units as this area of research progresses.
