AMPC partnered with Rubens Technologies to evaluate the capability of the Rubens spectral sensor to detect contaminants in red meat. 

Optical fluorescence has been proposed as a tool to evaluate meat quality, authenticate beef, and detect faecal contamination in carcases. The Rubens scanner uses absorbance and fluorescence spectroscopy. 

Using trimmed samples of lamb and mutton carcases that had a variety of contaminants. The samples were scanned using the Rubens sensor on the same day of collection. 

The data collected from this project will be used to determine where this technology may be used by line scanners.
