Digital fingerprinting to primals back to carcases

The aim of this project was to perform initial beef traceability using an AI solution that would allow beef primals to be tracked back to their carcase ID, without significant changes needed to production environments. 

Currently, once a carcase is broken down there are limited practical solutions to track and trace various cuts through the boning room. 

Extensive trials were performed at an NSW-based red meat processing plant with the AI fingerprinting technology achieving 100% accuracy.
