Optimising carcase fat depth measurement

The aim of this project was to trial two tools to measure beef and sheep fat depth. 

The Microwave Scanner (MiS) , which was developed by Murdoch University, and the Hennesssy Grading Probe (HGP) were trialled at a Western Australia processing plant to measure fat depth in sheep at the girth rib (GR) site and beef at the P8 site.

It was determined that the HGP could not accurately predict fat depth, while the MiS was successful in accurately measuring sheep fat depth. 

Accreditation trials for the MiS measurement of GR fat depth were successfully completed, meeting all AUS-MEAT accreditation standards.
