Measuring water holding capacity using NMR technology – stage 1

AMPC partnered with inMR Measure to conduct a literature review to determine whether nuclear magnetic resonance (NMR) can be used to make measurements and/or predict attributes related to water holding capacity of meat. 

The literature suggests that NMR measurements of water holding capacity could provide the following benefits: 
-    Predicting drip loss 
-    Sorting into the chiller 
-    Dark, firm, and dry (DFD) prediction 
-    pH complementary measurements
