Carcase inkjet printing

Focus area: Hands-off processing
Program stream: Advanced manufacturing
Project number: 2021-1101
AMPC partnered with Matthews Australasia to develop a custom food grade ink for use in inkjet printers that are capable of printing directly onto lamb and beef carcases.

As part of the project, trials were conducted in a simulated production environment using the ink to evaluate adhesion, quality, dry time, and print contrast onto a range of beef and lamb cuts.

The trials offered encouraging potential for ink printing directly onto meat, however further development of Halal ink is required along with confirmation of dry times and meat surface moisture levels.
