This month we talk with Dave Dwyer.
What did you do before AMPC?
I was the Research and Development Manager at Arcadian Organic Meat Company, the largest organic manufacturer of organic meats in Australia. Prior to that I was in New Zealand building a meat processing factory which specialised in salami, cooked foods and ready-made meals.
What do you love most about your role at AMPC?
I love being able to help manufacture products for meat processors and assist them in new processing techniques and developments.
Who is your favourite sports team?
The Springboks (South Africa) in the rugby.
Tell us something about yourself we wouldn’t know?
I own two restaurants and two shops and a beef snack food manufacturing company. I use my kitchen to test developments for meat processors before sharing with them.
Where do you see red meat processing in 10 years?
With new items entering the market such as plant based and fake meat, how we respond to this as an industry is quite urgent. We must look at innovative ways to present meat in a different way. We must use as much of the carcase as possible to generate as much income as possible to value-add. We need to rely on value-adding to the export market. As such I am really excited that AMPC will be launching a New Product Development Academy during in late 2021. More to come on this.
