Exploring freeze-drying to unlock value-add products for the red meat processing industry

The Australian Meat Processor Corporation (AMPC) is investing in a research project to explore the potential of onsite freeze-drying for low-value red meat products, including offal and blood.

Freeze-drying is a proven preservation method that removes moisture without affecting shape, colour, taste, or nutritional content, retaining up to 99.9 per cent of nutrients, making the process well-suited for producing ingredients for nutritional powders, sports supplements, meal replacements, and functional foods.

This project will assess the viability, scalability, and value of using the freeze-drying process to turn beef organs into bulk nutritional powders for domestic and international markets. 

AMPC Extension and Adoption Manager David Carew said, “With growing global interest in health, nutrition, and functional foods, there is strong demand for high-value powders derived from previously underutilised by-products.”

"Previous concerns around food safety and product availability limited the use of offal and blood. With onsite freeze-drying now an available option, these products are safer, more accessible, and more appealing."

Participating processors will work with research partners to test freeze-drying processes, develop capability, and assess product feasibility. The project will also explore supply chain strategies, market opportunities, and scalability, providing a roadmap for broader industry adoption.

In addition to the growth opportunities freeze-drying offers, there is also a significant financial benefit to adopting the process. Current toll-drying costs are around $5.50 per kilogram, while early projections suggest onsite freeze-drying could reduce costs to approximately $0.90 per kilogram (excluding capital expenditure).

David said, “This project will help Australian processors innovate, diversify, and meet evolving market demands, supporting the long-term sustainability and competitiveness of the industry.”
